Chorizo Topping
1 AdapTable Meals® Chorizo Pork Sausage
1 tbsp. olive oil
1 onion, finely diced
1 garlic clove, minced
1 tsp. chipotle paste
1 tsp. tamari sauce
Salt and freshly ground black pepper for seasoning
5 vine tomatoes, diced
½ cup water
For The Nachos
1 bag of lightly salted tortilla chips
1 ½ cups of cantina beans
½ red onion, finely sliced
7 oz grated cheddar cheese
4 tbsp. sour cream
1 handful of fresh coriander, roughly chopped
½ jar Mexican sliced green cactus
Method
Preheat the oven to 350°F.
Let's make the delicious chorizo topping! Start by heating some olive oil in a skillet over medium heat. Sauté the onion and garlic until they're nice and fragrant. Next, crumble the chorizo meat into the pan and add the chipotle paste, a dash of tamari, a pinch of salt, and black pepper. Give it all a good stir and let it cook for about 5 to 6 minutes until the chorizo turns crispy.
Now, it's time to bring in the juicy tomatoes and half a cup of water. Simmer for about 5 to 6 minutes. Then, gather your chorizo topping off the heat and set it aside.
Grab a medium-sized baking dish and spread half of your Lightly Salted Tortilla Chips in an even layer. Then, top them with ½ of the Cantina Beans, some red onion, cheese, and chorizo mixture. Next, add another layer of the remaining ingredients, drizzle some olive oil on top, and sprinkle with a pinch of salt and pepper for extra flavor. Then, place your loaded nachos in the oven and let the cheese melt, which should take about 10 minutes.
Take out the nacho tray from the oven and give them a generous topping of sour cream, freshly chopped coriander, and sliced Mexican green cactus slices.
