Ingredients
For the Pork Loin:
- 1 AdapTable® Meals Roasted Onion, Garlic & Bell Pepper Pork Loin
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- Salt & pepper to taste
- ½ tsp. ground cumin
- ½ tsp. onion powder
- 1 tsp. dried crushed rosemary
- 3 tbsp. olive oil, divided
- 1 tbsp. pure maple syrup
- 1 tbsp. whole grain Dijon mustard
- 1 tbsp. low-sodium soy sauce
- 1 tbsp. Worcestershire sauce
For the Dijon Cream Sauce:
- 2 tbsp. unsalted butter
- 2 tsp. dried thyme
- 2 cloves of garlic, finely minced
- ½ cup heavy whipping cream
- 1 tbsp. whole grain Dijon mustard
- 1 tbsp. fresh-squeezed lemon juice
- 1–3 tbsp. water, as needed to thin sauce
- Kosher salt & freshly ground black pepper, to taste)
Instructions
For the Pork Loin:
- Preheat oven to 375°F. Pat meat dry with a paper towel. Combine salt & pepper, onion powder, rosemary, thyme, cumin, and oregano. Give the spices a good mix. Now sprinkle over the pork loin. Using your hands, massage into the loin until evenly coated. Set aside to rest.
- In a separate bowl, mix one tbsp. olive oil, dijon mustard, maple syrup, Worcestershire sauce, and soy sauce. Whisk the mixture together and set aside until ready to use.
- Grab a large skillet and heat two tbsp. olive oil over a medium-high temp. Brown the meat until golden brown on all sides, about three to four minutes per side. Don’t cook through just yet, only sear to keep moisture in and bring out more flavor. Next, place onto a baking sheet and brush the prepared glaze mixture over the pork loin, ensuring all surfaces are coated.
- Place the prepped pork loin in the oven for 15 minutes, flip them over, and continue roasting for another 15 minutes until the loin reaches an internal temperature of 145° – 150°F (use a digital thermometer). Remove from oven, transfer onto a cutting board, and allow at least 10 minutes to rest.
For the Dijon Cream Sauce:
- Heat the butter over medium heat using the same skillet you cooked the pork loin with. Add garlic and sauté until fragrant, about one minute.
- Introduce lemon juice, heavy cream, and Dijon mustard to the skillet. Use a wooden utensil to scrape up any browned bits from the bottom. Gently simmer the sauce, add thyme, and season with salt and pepper to taste.
- Simmer for another 1-2 minutes until everything is well combined. If the sauce is too thick, gradually add a single tablespoon of water at a time until it reaches the desired consistency. When you’re happy with the consistency, remove sauce from heat and set aside.
To Serve:
- Slice the pork loin into thick slices and place on a large platter for all to help themselves. Dress the pan sauce over the slices. Garnish using fresh herbs for an added touch.
- Serve with your favorite side dishes, such as mashed potatoes, green beans, or salad. And most importantly, enjoy!
