Favorite Meal Ideas: Carnitas Salad

We are repurposing our favorite meal ideas from 2020, and Laura’s Carnitas Salad is one of our staples! Laura always provides us with delicious, healthy and easy meals to make at home for yourself or the whole family. And we know eating healthy is always a top priority (especially as we enter the new year)!
What we eat affects how we think and feel, making Laura’s grain- and dairy-free Carnitas Pork Roast Salad the perfect balance of health and flavor. Filled with vitamins and low in calories, the bell peppers add the perfect blend of sweet and mild flavor to this meal. This salad is also topped with avocados, that are full of healthy fats and are known for reducing the risk of heart disease. You can add any toppings you choose, but we recommend adding walnuts on top for an extra crunch!
Since it might be chilly where you live, you can easily make our Carnitas Pork Roast using your slow cooker in place of an Instant Pot while you cozy up inside. What’s great about a slow cooker is that you simply put the pre-seasoned pork in the pot and let the slow cooker do the work. So, whether you’re dropping the kids off at soccer practice or running to the grocery store, you’re guaranteed to have a flavorful meal on the table without compromising time in your busy day – it’s a win-win!
